1 small organic green pepper, chopped
1 small organic onion, chopped
1/2 lb organic ground turkey (pastured is even better if you can find it)
2 pastured eggs
2 thin slices of Beyond Organic Really Raw Havarti Cheese
2 TBS Extra Virgin Coconut Oil
1.) Saute onion and green pepper in a cast iron or stainless steel skillet with 1 TBS of coconut oil over Medium-High heat until onions are translucent.
2.) Reduce heat to medium, and add second TBS of coconut oil and turkey to skilled.
3.) When turkey is browned, crack in two eggs. Scramble together quickly with spoon or spatula, continuing to stir until well combined.
4.) Sprinkle in Herbamare to taste.
5.) Melt in cheese.
For a great post-workout meal, serve with sliced avocado, tomato, and 6-8oz glass of Plain Amasai (as pictured above). Also delicious served on a sprouted grain tortilla.
